
Single Serve "Bulked Fried Rice"
Ingredients:
1 tablespoon soy sauce
1 teaspoon minced garlic 1⁄4 teaspoon ginger
1⁄2 brown onion
1 cup cooked rice or microwave rice, preheated 2 eggs
1 carrot, diced
1 cup mushrooms, sliced
1 medium tomato, diced
1 spring onion stalks, sliced thinly
1 teaspoon turmeric powder
Drizzle of lime
Method:
1. Spray hot frypan with olive oil and allow to heat.
2. Heat soy sauce, minced garlic, turmeric and ginger together in frypan.
3. Once cooked through, mix through carrot, mushrooms, tomato and onion.
4. When the vegetables are half cooked, crack the eggs into the pan and fry altogether. Combine eggs with the veggies to create a “veggie scramble” type of texture.
5. Once eggs and vegetables are cooked thoroughly, mix through pre-cooked rice.
6. Drizzle lime and sprinkle with turmeric before serving.
